I have been in gastronomy for 25 years and I have gone through almost all types of cuisine from Czech to Indian. My closest approach is to Italian cuisine and street food and I like to look for new ways to embrace traditional recipes in a modern way. I have won the Michelin Bib Gourmand award, cooked for Hollywood stars, AC Milan footballers, F1 pilots as well as at the Le Mans 24h races. I like to spend my free time on the road, where I look for new tastes and inspiration.
I'm Thomas, known in the kitchen as the Shrimps. I was born in Hanoi, where the smell of fish sauce and chili shaped me. I specialize in authentic and modern Asian cuisine. I gathered my experience so far at SaSaZu Restaurant, Sia and as a chef at Shrimpia Kitchen. I love Czech sirloin and proper pho. I was even in Forbes, which valued me not because of the billions, but for the fact that the food I cook really tastes good.
I have been cooking since I was 14 years old and gained experience for eight years in Belgium, where I worked my way up to deputy chef at the best Italian restaurant in the city. My greatest experience is cooking for teams at DTM and WEC races. I prefer Asian and Italian cuisine. I spend my free time in the mountains, motorbike or at music events.
